Head Chef, Thomas sources only the freshest Scottish produce, whether it is seafood or hearty beef and as much as possible through local suppliers. Marco and his team of well trained, skillful chefs have had experience in some of Scotland's finest restaurants. The culmination of this expertise is evident when they conjure up some of the most tantalizing dishes around and often exceeds our discerning clients' expectations time and time again. Having been a tower of strength when designing and writing menus, this has allowed the group to Marco to Management have been employed on the basis that they are professional, hard working and will carry out the concept of the restaurant whilst bringing their own unique personalities to the business. In turn they employ their staff under the same basis and in many cases we take novice staff and train them to our high level of standards and exceptional customer care. Their uniforms once again follow a traditional theme; formal white dinner shirts with long burgundy aprons look sophisticated, smart and ready for wowing guests. Modern yet traditional, the restaurant carries a certain ambience that only a room of that caliber can give. With the layout of the restaurant being spacious yet cozy, the tiled walls, soft carpeting, ambience, relaxing music are all part of the dining experience. The finishing touch is added by the candles lit by day and by night, giving a glow to the warm hearted restaurant and the waiting staff.
